Mango salsa with Wasabi Crackers East Meets West board 15 min 4 servings By Danny Jansen & Patricia Snijders For this recipe 1 mango, peeled Red pepper, to taste 3 sprigs coriander, finely chopped 1 tbsp apricot jam 1 tsp rice vinegar 12 Wasabi Crackers Directions Peel the mango and cut the flesh from the stone. Cut the mango into slices, then strips and finally small cubes. Mix the mango cubes with finely chopped red pepper, coriander, apricot jam and rice vinegar. Place the Wasabi Crackers onto a serving board. Divide the mango salsa between the crackers. Garnish with a single coriander leaf.
