Flaming Hot Thai chilli meatballs By Danny Jansen & Patricia Snijders For this recipe 250g minced chicken 1 tbsp maize starch 1 small onion, chopped 1 clove garlic, grated 1-2 tbsp Thai red curry paste salt, to taste 2 tbsp sunflower oil 100g Sweet Thai chilli sauce a few sprigs of chives 2 tbsp fried onions Directions Mix the maize starch, chopped onion, garlic, red curry paste and a pinch of salt into the mince. Knead well and shape small balls of minced meat. Add sunflower oil and the meatballs to a large, medium-hot saucepan. Fry the meatballs until they are brown and cooked through. This will take about 6 minutes. Then add the Sweet Thai chilli sauce and keep frying for another half a minute. Spoon the Thai chilli meatballs into a large bowl and sprinkle some roughly chopped chives and fried onions over the top.
